Currently, he serves as the Director of Culinary Innovation at Nature's Fynd, where he is leading the charge in developing sustainable, cutting-edge food products in collaboration with Chef Eric Ripert. His career has taken him through some of the world’s most iconic kitchens, including Noma, Arzak, Alinea, and Moto, where he trained with legends like René Redzepi, Juan Mari Arzak, Grant Achatz, and the late Homaro Cantu. In addition to his work in fine dining, Chef Plotkin has collaborated with top-tier brands such as SpaceX, Tesla, and NASA, contributing to projects that push the boundaries of culinary science and innovation. As founder of Epic Eats and former Chief Culinary Officer at Tovala, Chef Plotkin combines his culinary expertise with a strong foundation in food tech and product development, constantly striving to redefine the future of food.
