Chef Anthony hails from Brussels, Belgium. He was schooled at the Hotelier Provincial School of Namur in Belgium, primarily focused on French and European cuisine. After working at various Stars Michelin venues in Belgium, his curiosity took him to Amelia Island, Florida, where he was employed by the Ritz Carlton Hotel. In 2012, he transferred to the Ritz Carlton Resort in Grand Cayman. Anthony gained experience in several capacities at the Ritz, until he joined the opening team at the newest resort on Grand Cayman, the Kimpton Seafire Resort and Spa before opening Brussels Sprouts.
