NICOLAU ALEXANDRE

Originally from Portugal, Nicolau was born in the Dão region, one of the country’s most celebrated wine areas. His connection to wine began early, helping stomp grapes in his grandfather’s wine press. The gatherings of family and friends, and the energy of those moments, made a lasting impression.

He later earned a bachelor’s degree in Hospitality Management with a focus on Food & Beverage from Escola de Hotelaria e Turismo do Douro. His career took him to some of the most notable resorts and Michelin-starred restaurants in southern Portugal, including Vila Vita Parc, Restaurante BonBon*, and the opening team at W Algarve. During this time, he developed a deep appreciation for wines from around the world, memorable pairings, and the joy of a well-set table.

Wine continued to inspire him, leading him to spend much of his time learning from sommeliers and visiting wineries and vineyards across Portugal, Spain, and Italy. After completing his WSET certification, he knew this was the path he wanted to pursue fully.

Nicolau recently joined The Ritz-Carlton, Grand Cayman as a Sommelier, where he continues to share his passion for wine, hospitality, and thoughtful guest experiences.
