DAVID DESHAIES

A native of the Loire Valley in France, Chef David Deshaies began his culinary career at the age
of 16. His journey started with an apprenticeship in Michelin-starred restaurants across France
and Spain, eventually bringing him to the United States in 2001 to work alongside legendary
chef Michel Richard at his flagship restaurant, Citronelle, in Washington, D.C.

Deshaies later became chef-partner at Central Michel Richard, a celebrated French-American
brasserie in downtown D.C. In 2008, the James Beard Foundation named Central Michel
Richard the winner of the “Best New Restaurant” award. 

In 2017, he teamed up with business partner Eric Eden to open Unconventional Diner, which
earned a Bib Gourmand designation from the Michelin Guide. In 2020, Deshaies was named
Chef of the Year by the Restaurant Association of Metropolitan Washington (RAMW).

In the fall of 2021, Deshaies and Eden launched L’Ardente, a glamorous Italian restaurant that
received the Upscale Casual Restaurant of the Year RAMMY in 2022. In May 2023, Deshaies
expanded his vision with Love, Makoto, an ambitious Japanese culinary destination featuring
two full-service restaurants, a bar, and a fast-casual concept—developed in partnership with
Eden and Chef Makoto Okuwa.

A 2023 James Beard Award semifinalist, Deshaies was also honored in 2024 with the
prestigious title of Maître Cuisinier de France (Master Chef of France).

With over 30 years of experience in luxury hotels and fine dining, Chef Deshaies is a proven
leader dedicated to excellence. His passion for the craft, consistency, and focus are at the heart
of every operation he leads.
