Honing his craft in diverse kitchens—from the acclaimed Park Hyatt Washington D.C. and the Hyatt at the Bellevue in Philadelphia to the expansive Grand Hyatt Incheon South Korea—Chef Paroulek has a true global perspective. He now applies that knowledge with a passion for showcasing the richness of local Caymanian produce through refined, seasonal menus, guided by an ingredient-first philosophy that emphasizes sustainability and simplicity. This approach allows the natural flavors to take center stage while supporting local farmers and producers.
