
SANTIAGO MANCINI
Born and raised in Buenos Aires, Argentina, Chef Santiago discovered his passion for cooking at an early age, frequently experimenting with flavors and techniques in the kitchen. His culinary curiosity, combined with a deep appreciation for fresh, local ingredients, was shaped by his family's cooking traditions. After graduating from culinary school, Santiago furthered his career at the Ritz-Carlton in Naples, Florida, before moving to the Cayman Islands. There, he joined the Grand Cayman Marriott Resort, playing a pivotal role in the launch of the Anchor & Den concept as Chef de Cuisine.

Following this success, he continued his culinary journey as Executive Sous Chef at the Aruba Marriott Resort, where he introduced new concepts and elevated the resort's offerings. In 2022, Santiago returned to the Cayman Islands, where he now serves as Executive Sous Chef at the Grand Cayman Marriott Resort, delighting guests with his innovative use of local ingredients and his signature fusion of Latin American and Caribbean flavors.
