SCOTT SHIRLEY

With a degree in Biochemistry from the University of California Davis, Scott traded ambitions of medical school for work at a winery in California’s Central Valley. After two harvests, he moved to Napa Valley and made wine for thirteen years, mentored by luminaries in the field. Scott now has as many harvests under his belt in Paso Robles, leading JUSTIN Vineyards & Winery in crafting luxury Bordeaux-style blends and Cabernet Sauvignon. As Winemaker at JUSTIN, he enjoys discovering the personalities and idiosyncrasies of various microclimates and vineyard blocks across the appellation.


Each blend ideally represents both the growing conditions of a vintage and of Paso Robles, while maintaining the iconic style of JUSTIN, a pioneer of the region. Contributing to Paso’s deserved praise on wine lists and in the marketplace has been rewarding both professionally and personally for Scott.


The Restaurant at JUSTIN is the only restaurant in the country located on a winery’s estate to receive a Michelin star, as well as a Michelin green star for sustainability. JUSTIN wine pairings complement each course on the prix fixe menu.
